Ingredients

  • Cherry tomatoes (7-8)
  • Half an onion
  • 1 can of tuna
  • 4 spears of asparagus
  • ⅓ pack of angel hair pasta or 4 vermicelli noodles
  • Salt
  • Sugar
  • Balsamic vinegar
  • Black pepper

Steps

  1. Prepare your pasta: Cook angel hair pasta or vermicelli noodles according to package instructions. Rinse under cold water to cool completely, and drain well.
  2. Prepare the asparagus. Snap off the tough ends of the asparagus spears. Cut the remaining stalks into 2–3 pieces. Blanch in boiling water for 1-2 minutes, then shock in ice water to preserve their vibrant green color. Drain thoroughly.
  3. Assemble your salad. Halve the cherry tomatoes and finely dice the onion. Combine the tomatoes, onion, cooked asparagus, and drained tuna in a large bowl.
  4. Season to taste: add a pinch of salt, a touch of sugar, a splash of balsamic vinegar, and freshly ground black pepper. Stir well to combine all the flavours.
  5. Serve: Divide the cooked pasta between individual bowls and top generously with the tomato-tuna mixture.
